Delicious Frozen Banana Bites

INGREDIENTS
2 cups dairy-free dark chocolate chips
2 tablespoons of coconut oil
½ a cup of cashew butter or whatever nut/seed butter you prefer.
Toppings of choice like coconut flakes, chopped nuts, and seeds, goji berries, hemp hearts, chia seeds, dried currents, etc.
3 perfectly yellow bananas, peeled, and cut into 1inch thick slices
INSTRUCTIONS
To melt chocolate pour a few inches of water into your pot. (Make sure you use a heatproof bowl and spatula). Fit a bowl over the pot, making sure the bottom of the bowl does not touch the water. Heat the water to a simmer. Turn off the heat and add 2/3 of the chopped chocolate chips and coconut oil to your bowl. Stir gently to melt. Add the remaining 1/3 of the chocolate a little at a time and stir gently to melt.
Place toppings in a separate dish. Line a freezer-proof tray with parchment paper. Arrange banana slices on your tray. Add a dollop of cashew butter on top of your banana slice and place a toothpick down the center of each banana. One by one dip banana slices in chocolate coating. Drop dipped banana in 1 topping at a time. Using a clean hand, sprinkle more topping over the banana to coat; transfer to sheet. Repeat with remaining bananas, chocolate, and toppings. Freeze until firm, about 2-3 hours, then serve.
