Mango Guacamole Recipe



Ingredients:

  • 2 ripe avocados, halved and pitted

  • 1 fresh mango, peeled and diced small

  • 1 cup loosely packed cilantro, chopped

  • ¼ medium red onion, minced

  • 1 tbsp of fresh lime, juiced 

  • ½ jalapeno, minced (remove most of the seeds)

  • 1 tsp minced garlic (about 1 large clove)

  • ½ tsp sea salt, plus more to taste

  • 1 tsp of extra virgin olive oil 

  • ½ tsp tajin

Directions:

Scoop the avocados out of their skin and mash with a fork or if you’re fancy, use a pestle. I like it nice and chunky, so I tend to take this step very seriously. 

Stir in the rest of the ingredients except the mango and olive oil. NOTE: The jalapeno peppers get spicier at the stem, so use take that into consideration or be prepared with an iced cold beverage to extinguish the fire. 


Adjust salt add chopped mango and finish it off with a healthy drizzle of high quality olive oil. 


Voila! Serve with fresh corn chips or fried plantain
