Stewed Strawberry and Coconut Delight



Popsicle Molds and Sticks


  • 15 oz coconut milk

  • 1/4 cup hemp hearts (optional)

  • 3 Tbsp of maple syrup

  • 1 tsp acropolis balsamic vinegar

  • 1 tsp of vanilla extract

  • 1 pinch of salt

  • 12 large strawberries, sliced

  • 8 popsicle sticks



  1. In a bowl, combine coconut milk, hemp hearts, and mix.

  2. Add sliced strawberries, maple syrup, and vanilla extract with a pinch of salt and heat gently to a simmer over medium heat until the strawberries are soft. Remove from the heat. Set aside to cool to room temperature.

  3. Fill popsicle molds with a combination of strawberries and coconut milk. Add sticks and freeze. There is no wrong way of doing this step.

  4. Freeze for 6 hours or overnight.

  5. To remove ice pops from the molds, run under hot water for 20 seconds, and carefully pull them out.

This recipe also goes well with other berries too. I love to add a few pieces of fresh strawberries in the mold to give it a texture variation. Adjust sweetness to taste and enjoy!
